My 11th Hour Cinco de Mayo Celebration

The busyness of the day kept me from celebrating Cinco de Mayo in true socialite form but the least I could do was celebrate with my favorite easy breezy guacamole recipe and a grapefruit (didn't have anymore limes) margarita! Just in case you're wondering...

The guacamole calls for...
1-3 avocados (it was just me tonight so 1),
2 tablespoons of Trader Joe's Fresh Salsa Mild (this stuff is great because it already has the perfect blend of tomatoes, onions, and cilantro all you need to do is add the avos and seasonings)
1/2 lime per avocado
teaspoon of salt
teaspoon of pepper (I prefer freshly ground)
teaspoon of garlic powder
AND voila! Warm some flour tortillas or pair with tortilla chips and dip away.

The margaritas..well I'm already done with the batch I made so I don't think that I can recall exactly how I made them at this point in the evening.
Perhaps it was a few shots of Tequila (2-3)
1/4 cup of Triple Sec
 1/4 Cup freshly squeezed grapefruit juice
 1-2 ounces of simple syrup.
Shake altogether in a cocktail shaker over ice and pour into a nice chilled, sugar-rimmed glass! Perhaps start all over, add, or reduce whichever ingredient to your desired level of perfection and life is good!
